Our weekly ritual every Saturday "The Farmers Market".... well it is intended, but never accomplished :( Sadly I have yet to proudly admit that we visit the farmers market every saturday like we TRY to..... But we do try!! and if its not one reason or the other, like having appointments , sleeping in, or simply lack of funds that week..... we always make up for it when we can... Shopping at the farmers market not only is good for you, but it gets me all excited for whats to come for dinner in the week, Demetris & I plan our weekly dinners, which can range from vegetable lasagna to basil garlic Mediterranean pasta...... home made Caprese panini, delicious mediterranean salads, home made citrus dressings ( I do not buy store bought dressings)....... So today I have decided to add my HOMEMADE CITRUS SALAD DRESSING RECIPE :) scroll down to the bottom for the recipe :) I will be sharing photos of my home garden which is in the works...
My HOME MADE CITRUS SALAD DRESSING! firstly I wanted to say that this particular recipe started with the base of Lemon oil and salt, which was my mothers famous dressing.......
2 Lemons plus grated rind
1 large ruby red grapefruit or pomelo
1 naval orange (or any juice orange)
1/4 cup Extra Virgin Olive Oil
2 tablespoons White wine vinegar
salt to taste
Pepper to taste
1 clove Garlic crushed
Juice all citrus/s lemon, limes, orange and grapefruit
add the rind ( 1 tablespoon)
add olive oil, vinegar garlic salt and pepper and mix well
Store in an air sealed tight bottle or container for up to 2 weeks in the fridge :)
You can serve on almost any salad...
tips:- make a green salad with lettuce of your choice, add feta cheese, kalamata olives, cherry and pear tomatoes, fresh basil, fresh parsley, and fresh mint leaves. :)
